Post Run Pizza Dough Recipe

After a long day of training nothing sounds more delicious than a fresh baked pizza. Long runs on week nights after work end up giving us little time to prepare a nice dinner. My routine was to order a pizza from the Papa Johns app when we were about a mile away from the house giving us enough time to get home and shower before the pizza arrives just in time to eat and stretch. We looked at our budget and then at our bellies and decided we could do better and this was where we began our homemade pizza recipe.

The goals for our pizza dough are as follows:

  • Be delicious
  • Be healthier
  • Include nutrients for recovery

Thailyr and I both love Hawaiian pizzas so our toppings generally include pineapple and some sort of meat. Thailyr did some reading on ways to help reduce inflammation after I had a pretty severe battle with it a year ago and found that in combination Turmeric and Bromelain when used together worked the best for me. Bromelain is extracted from the stem of pineapples but it’s also found in the fresh fruit slices so pineapple as a topping can now be a recovery process. In an effort to reduce taking supplements we try to put turmeric into all our recipes in a quantity that doesn’t affect the taste but helps increase our overall consumption.

A basic pizza dough recipe starts out with these key ingredients; flour, sugar, salt, oil, water, yeast.

I mix all the dry ingredients first and put them into a bread maker to handle kneading and mixing the dough for me. Our bread-maker has a basic dough setting that takes about two hours to complete.

  • 2 cups flour
  • 2 tablespoons sugar
  • 2.5 teaspoons salt
  • 1 tablespoon Peanut Oil
  • 3/4 cup water
  • 1 tablespoon minced garlic
  • 1 teaspoon turmeric
  • 1 tablespoon honey

1. Add all the dry ingredients first. We start with the 2 cups of flour.

1 Cup of Flour

Leveled cup of flour

We mix a blend of whole wheat and white flour to get a thicker texture in the crust. You can vary this pretty easily but I suggest starting with all white and slowly swapping a quarter cup of whole wheat till you find a result you like.

White and Whole Wheat Flour

1.5 Cups of White flour and 0.5 Cups of Whole Wheat

2. After a quick mix I add the liquids, in this case I put it all into our bread machine and set it to just make dough. This takes about 2 hours and has a heater to keep the yeast most active but in some cases I make the dough in a larger batch in the kitchen aid mixer and then store it in the fridge for a day or two and let it rise slowly. If you’re not using a bread machine mixed the dough on low for 15 minutes and clear from dough hook and let rest for 30 minutes while covered in a warm area.

Peanut Oil

Adding 1 tablespoon of Peanut Oil

Optional honey added. If using any whole wheat dough I highly suggest adding some honey.

Minced Garlic

Pre-minced garlic doesn’t have the best flavor but it’s much quicker then chopping fresh garlic if you’re eating a lot of pizza

3. After the dough has mixed in the bread machine it’s removed and ready to be worked into pizza shape.

Pizza Dough

Dough ready to be shaped into pizza pies

We bought a pizza oven microwave which has a small drawer at the bottom that works as a convection oven. It took a little getting used to how it works and it’s built in recipe settings need adjustments but I love being able to set the timer and walk away without needing to check on the pizza.

4. I start with a greased cast iron skillet and using half the dough cut evenly from the above recipe roll it out into a flat disc that fits the shape of the skillet. Let the dough rest in the skillet covered for 5-10 minutes then apply sauce and cheese.

Cheese Pizza

This is pretty straight forward from here once you cheese and sauce a pizza

The Turmeric is mixed into the dough so we put pineapple on top of the pizza to get bromelain. We almost always add in some meats for protein value so in this case we went with Chicken and Bacon.

Sliced Grilled Chicken

Immersion cooked chicken lightly grilled then sliced to make putting into meals quicker

Canned Pinapple

Using canned Pineapple rings instead of chunks makes the consistency of the slices on the pizza more even.

5. If using a cast iron pan put it on top of the stove on a burner set to high for 2 minutes first. This heats the skillet up and starts to make the edges and bottom crisper when cooking. Put the pizza into a standard oven at 400 degrees Fahrenheit for 15 minutes. If using a convection oven, or the awesome pizza microwave oven we have, set it to 400 degrees Fahrenheit for 18.5 minutes. When removing the pizza from the oven allow it to sit in the skillet for another minute before transferring to a cutting board to finalize the crispy edges.

Pizza in the oven

There’s no window in the pizza oven so we used the stove for this pizza.

Some other tips:

  • You can use the entire dough in a single pizza just increase to a larger skillet or you’ll end up with what we have in the last picture which looks more like a dutch baby pancake.
  • Add Thyme and other dry seasoning the last 5 minutes of cooking.

If you use our recipe and modify it any let us know in the comments below so we can try out any suggestions!
